Queso Ingredients:

  • 6 Tbsp unsalted butter
  • 6 Tbsp all-purpose flour
  • 4 1/2 c whole milk
  • 1 1/2 lb sliced white American cheese
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly ground pepper

Bacon, Egg, and Cheese Breakfast Totchos Ingredients:

  • 6 lb frozen tater tots
  • 24 oz thick-cut bacon, chopped
  • 12 Davidson's Safest Choice® pasteurized shell egg(s)
  • 4 1/2 c queso
  • 3 bunches scallions
  • ketchup, sriracha, or other condiments for garnish

Queso Ingredients:

  • 12 oz unsalted butter
  • 1 1/2 c all-purpose flour
  • 1 gal + 1 pint whole milk
  • 6 lb sliced white American cheese
  • 1 tsp kosher salt
  • 1 tsp freshly ground pepper

Bacon, Egg, and Cheese Breakfast Totchos Ingredients:

  • 24 lb frozen tater tots
  • 6 lb thick-cut bacon, chopped
  • 48 Davidson's Safest Choice® pasteurized shell egg(s)
  • 4 1/2 c queso
  • 12 bunches scallions
  • ketchup, sriracha, or other condiments for garnish

Preparation:

    Queso

  1. Melt butter in a saucepan over medium/medium-low heat. Add flour and stir constantly for 1-2 minutes. Cook away the raw flour taste, but do not let it get too brown.
  2. Add whole milk and stir until the butter-flour mixture has been completely incorporated. Cook, stirring occasionally, until the milk thickens slightly (it will begin to boil) and it coats the back of a spoon. Remove pan from heat, add cheese and season with kosher salt and freshly ground black pepper; stir until fully melted. If cheese doesn"t melt completely, return to low heat to aid the process.

  1. Bake tater tots according to package directions, until crispy.
  2. Meanwhile, cook chopped bacon over medium/medium-low heat until crisp.
  3. Spray a griddle or nonstick skillet with nonstick cooking spray and heat over medium/medium low heat. Once hot, crack open eggs and add them, one at a time, into the skillet. Season with salt and pepper and cover with a lid. This will help the tops of the whites set before overcooking the bottom of the eggs. The eggs are done cooking when the whites are just set (the yolks will still be runny).
  4. For each serving, portion 8 ounces of tater tots on serving dish and top with 1/3 cup queso, 1 ounce cooked bacon, scallions, 1 egg, and the condiments of your choice (ketchup, sriracha, etc). Check portioning for your product; estimated: 18 tater tots and 1 ounce cooked weight for bacon, per serving.
