Baked Eggs in Potato Nest recipe

Serving Size: 1 egg with 1/2 cup potato nest

  • 3 lb hashbrown potatoes (fresh)
  • 1/4 c vegetable oil
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • salt to taste
  • pepper to taste
  • 2 lb tomatoes (diced & sauteed)
  • 8 oz yellow onion (diced & sauteed)
  • 12 Davidson's Safest Choice® pasteurized shell egg(s)
  • 2 oz parsley (garnish)

Ingredients:

  • 6 lb hashbrown potatoes (fresh)
  • 1/2 c vegetable oil
  • 1 tsp cumin
  • 1 tsp paprika
  • salt to taste
  • pepper to taste
  • 4 lb tomatoes (diced & sauteed)
  • 1 lb yellow onion (diced & sauteed)
  • 24 Davidson's Safest Choice® pasteurized shell egg(s)
  • 4 oz parsley (garnish)

Ingredients:

  • 12 lb hashbrown potatoes (fresh)
  • 1 c vegetable oil
  • 2 tsp cumin
  • 2 tsp paprika
  • salt to taste
  • pepper to taste
  • 8 lb tomatoes (diced & sauteed)
  • 2 lb yellow onion (diced & sauteed)
  • 48 Davidson's Safest Choice® pasteurized shell egg(s)
  • 6 oz parsley (garnish)

Ingredients:

  • 18 lb hashbrown potatoes (fresh)
  • 1 1/2 c vegetable oil
  • 1 Tbsp cumin
  • 1 Tbsp paprika
  • salt to taste
  • pepper to taste
  • 12 lb tomatoes (diced & sauteed)
  • 3 lb ellow onion (diced & sauteed)
  • 72 Davidson's Safest Choice® pasteurized shell egg(s)
  • 8 oz parsley (garnish)

Preparation:

  1. Sauté the hashbrowns with cumin, paprika, salt, and pepper until golden brown. Arrange into 1/2 cup nests in a lightly greased hotel pan.
  2. Mix the sautéed tomatoes and onions and place 1 tablespoon into each potato nest.
  3. Break the eggs one at a time into a cup, and transfer into each potato nest.
  4. Cover the pan tightly with aluminum foil so no steam escapes, and finish cooking in the oven for about 5-8 minutes, or until whites are firm and yolk is soft.
  5. Remove foil and plate 1 nest per person, or serve in hotel pan and garnish with parsley.

Notes

Can be served with hollandaise sauce.
