Broccoli-Carrot Frittata foodservice recipe

Ingredients:

  • 10 oz chopped broccoli or frozen chopped broccoli
  • 1 c diced carrot
  • 1/2 c water
  • 16 Davidson's Safest Choice® pasteurized shell egg(s)
  • 6 oz shredded reduced-fat cheddar cheese
  • 1 c skim or low-fat milk
  • 2 Tbsp instant minced onion
  • 4 tsp prepared mustard
  • 1/4 tsp pepper

Ingredients:

  • 20 oz chopped broccoli or frozen chopped broccoli
  • 2 c diced carrot
  • 1 c water
  • 32 Davidson's Safest Choice® pasteurized shell egg(s)
  • 12 oz shredded reduced-fat cheddar cheese
  • 2 c skim or low-fat milk
  • 4 Tbsp instant minced onion
  • 2 1/2 Tbsp prepared mustard
  • 1/2 tsp pepper

Ingredients:

  • 40 oz chopped broccoli or frozen chopped broccoli
  • 1 qt diced carrot
  • 2 c water
  • 64 Davidson's Safest Choice® pasteurized shell egg(s)
  • 24 oz shredded reduced-fat cheddar cheese
  • 3 c skim or low-fat milk
  • 6 Tbsp instant minced onion
  • 5 Tbsp prepared mustard
  • 1 tsp pepper

Ingredients:

  • 60 oz chopped broccoli or frozen chopped broccoli
  • 1 1/2 qt diced carrot
  • 3 c water
  • 96 Davidson's Safest Choice® pasteurized shell egg(s)
  • 36 oz shredded reduced-fat cheddar cheese
  • 5 c skim or low-fat milk
  • 1/2 c instant minced onion
  • 1/2 c prepared mustard
  • 1 1/2 tsp pepper

Preparation:

  1. Evenly coat 10-inch omelet pans or skillets with ovenproof handle with cooking spray. Add broccoli, carrot, and water. Cover and cook over medium-high heat until carrot is crisp-tender, about 5 to 10 minutes. (Uncover and stir occasionally, if necessary, to break apart frozen broccoli.) Drain well. Return vegetables to pan. Set aside.
  2. In large bowl, beat together eggs, cheese, milk, onion, mustard, and salt, if desired and pepper until well blended. Pour over reserved vegetables. Cover and cook over medium heat until eggs are almost set, about 8 to 10 minutes.
  3. Uncover and broil about 6 inches from heat until eggs are completely set in center, about 2 to 3 minutes or let stand, covered, until eggs are completely set in center, about 8 to 10 minutes. Cut into wedges and serve.

Notes

Prepare in 2 individual batches for 12 servings. There are 6 servings per 10-inch omelet pan.
