Burger Bowl with Potato Hash foodservice recipe

Yield:

Ingredients:

  • 2 1/4 lb russet potatoes, diced
  • 2 1/4 lb sweet potatoes, diced
  • 6 slices bacon, diced
  • 3 c onion, diced
  • 3 c bell pepper, diced
  • 1/4 c + 2 Tbsp fresh parsley, minced
  • 3 Tbsp fresh thyme, minced
  • 1 Tbsp salt
  • 24 patties lean ground beef
  • salt & pepper to taste
  • 6 avocado, diced
  • 24 Davidson's Safest Choice® pasteurized shell egg(s) cooked sunny-side up

Ingredients:

  • 4 1/2 lb russet potatoes, diced
  • 4 1/2 lb sweet potatoes, diced
  • 12 slices bacon, diced
  • 6 c onion, diced
  • 6 c bell pepper, diced
  • 3/4 c fresh parsley, minced
  • 1/4 c + 2 Tbsp fresh thyme, minced
  • 2 Tbsp salt
  • 48 patties lean ground beef
  • salt & pepper to taste
  • 12 avocado, diced
  • 48 cooked sunny-side up

Ingredients:

  • 6 3/4 lb russet potatoes, diced
  • 6 3/4 lb sweet potatoes, diced
  • 18 slices bacon, diced
  • 4 1/2 lb onion, diced
  • 4 1/2 lb bell pepper, diced
  • 1 c + 2 Tbsp fresh parsley, minced
  • 1 cup c + 1 Tbsp fresh thyme, minced
  • 3 Tbsp salt
  • 72 patties lean ground beef
  • salt & pepper to taste
  • 18 avocado, diced
  • 72 cooked sunny-side up

Preparation:

  1. Cook potatoes in microwave until partially cooked.
  2. Cook bacon in non-stick sauté pan over medium heat until fat is rendered, but bacon is not crisp. Add onion and peppers and cook for 1-2 minutes. Add potatoes and continue cooking for 10 minutes or until potatoes are tender. Stir occasionally.
  3. Stir in parsley, thyme, and salt. Spread mixture into an even layer, pressing down lightly with a flat spatula. Cook 5-8 minutes without stirring until vegetables are brown. Stir and spread again and cook for an additional 4-5 minutes. Remove from pan, cover, and keep warm.
  4. Season beef patties with salt and pepper. Preheat grill and cook for 3-4 minutes, carefully flip burgers and cook for an additional 5 minutes or until 160°F is reached.
  5. Place 1/2 cup of hash on a plate, sprinkle with 1 tablespoon avocado. Top with burger. Place egg on each burger. Sprinkle with salt and pepper, fresh parsley, and thyme (optional).
