California Nicoise Salad with Hard-Boiled Eggs foodservice recipe

  • 18 Davidson's Safest Choice® pasteurized shell egg(s)
  • 12 oz red bell peppers (julienne & roasted)
  • 5 oz yellow onion (julienne & roasted)
  • 3 oz arugula (rinsed clean)
  • 3 oz bibb lettuce (chopped and rinsed clean)
  • 1 lb sweet potato chips (frozen or fresh)
  • 1 lb green beans (blanched & sautéed al dente)

Ingredients:

Avocado Salsa

  • 3 avocado (diced)
  • 10 oz tomatoes (diced)
  • 1/2 tsp garlic (peeled and mashed into a purée)
  • 1 oz cilantro
  • 1/4 c olive oil
  • 4 tsp lemon juice
  • salt to taste
  • pepper to taste

Ingredients:

  • 1 1/2 lb red bell peppers (julienne & roasted)
  • 10 1/2 oz yellow onion (julienne & roasted)
  • 6 oz arugula (rinsed clean)

  • 2 lb sweet potato chips (frozen or fresh)
  • 2 lb green beans (blanched & sautéed al dente)

  • 5 avocado (diced)
  • 21 oz tomatoes (diced)

  • 4 1/2 lb red bell peppers (julienne & roasted)
  • 32 oz yellow onion (julienne & roasted)
  • 1 1/4 lb arugula (rinsed clean)
  • 1 1/4 lb bibb lettuce (chopped and rinsed clean)
  • 6 lb sweet potato chips (frozen or fresh)
  • 6 lb green beans (blanched & sautéed al dente)

Ingredients:

Avocado Salsa

  • 16 avocado (diced)
  • 4 lb tomatoes (diced)
  • 1 Tbsp garlic (peeled and mashed into a purée)
  • 8 oz cilantro
  • 1 1/2 c olive oil
  • 1/2 c lemon juice
  • salt to taste
  • pepper to taste

Preparation:

  1. Put the eggs in a sauce pan with enough cold water to cover. Boil for 15 minutes and remove from heat. Drain the eggs and allow to cool under cold running water. Remove the shells and quarter the egg.
  2. Prepare avocado salsa by combining all ingredients and set aside in cooler until ready for use.
  3. Roast peppers and onions until al dente and set aside until ready for use.
  4. Chop and rinse greens.
  5. Fry frozen or fresh sweet potatoes. Drain.
  6. Combine greens with avocado salsa. Arrange or garnish with eggs, roasted bell peppers & onions, green beans, and sweet potatoes.

Notes

Can be served as large salad or prepared to order as an action station
