Davidson's Safest Choice Classic Eggnog foodservice recipe

Serving Size: 3/4 cup without alcohol

Ingredients:

  • 7 Davidson's Safest Choice® pasteurized shell egg(s), separated
  • 1 c granulated sugar
  • 2 1/2 c heavy cream
  • 1 1/4 c whole milk
  • 1 1/4 c dark rum, bourbon or brandy (optional)
  • 3 1/2 tsp vanilla extract, optional
  • ground nutmeg or cinnamon to taste

Ingredients:

  • 14 Davidson's Safest Choice® pasteurized shell egg(s)
  • 1 3/4 c granulated sugar
  • 4 3/4 c heavy cream
  • 2 1/3 c whole milk
  • 2 1/2 c dark rum, bourbon or brandy (optional)
  • 7 tsp vanilla extract (optional)
  • ground nutmeg or cinnamon to taste

Ingredients:

  • 29 Davidson's Safest Choice® pasteurized shell egg(s)
  • 3 2/3 c granulated sugar
  • 2 1/2 qt heavy cream
  • 4 3/4 c whole milk
  • 5 c dark rum, bourbon or brandy (optional)
  • 1/3 c vanilla extract (optional)
  • ground nutmeg or cinnamon to taste

Ingredients:

  • 43 Davidson's Safest Choice® pasteurized shell egg(s)
  • 5 1/2 c granulated sugar
  • 3 1/2 qt heavy cream
  • 7 1/4 c whole milk
  • 7 1/4 c ark rum, bourbon or brandy (optional)
  • 1/2 c vanilla extract (optional)
  • ground nutmeg or cinnamon to taste

Preparation:

  1. Place egg yolks in large bowl. Beat with electric mixer until combined.
  2. Gradually add sugar, beating until mixture is thick and pale yellow.
  3. Stir in cream and milk, then rum and vanilla, if desired.
  4. Cover and refrigerate until chilled or as long as overnight. Just before serving, beat room temperature egg whites with electric mixer until soft peaks form.
  5. Stir egg yolk mixture. Gently fold in beaten egg whites. Pour eggnog into punch bowl. Sprinkle with nutmeg.
