  • 3 qt chicken stock
  • 2 tsp soy sauce
  • 1 c raw spinach, clean and thinly sliced
  • 2 stalks green onions
  • pinch white pepper

  • 6 qt chicken stock
  • 4 tsp soy sauce
  • 2 c raw spinach, clean and thinly sliced
  • 4 stalks green onions
  • 1/8 tsp white pepper

Ingredients:

  • 16 Davidson's Safest Choice® pasteurized shell egg(s)
  • 3 gal chicken stock
  • 8 tsp soy sauce
  • 4 c raw spinach, clean and thinly sliced
  • 8 stalks green onions
  • 1/4 tsp white pepper

Ingredients:

  • 24 Davidson's Safest Choice® pasteurized shell egg(s)
  • 4 1/2 gal chicken stock
  • 1/4 c soy sauce
  • 6 c raw spinach, clean and thinly sliced
  • 12 stalks green onions
  • 3/8 tsp white pepper

Preparation:

  1. Heat chicken stock and soy sauce to a simmer.
  2. Lightly beat eggs in a bowl.
  3. Add eggs slowly to the stock using a spoon to stir.
  4. Add the spinach, green onions, and white pepper to taste. Heat through and serve hot.

Notes

Garnish with crisp Chinese noodles.
