The egg, prosciutto, and arugula sandwich quantity recipe for foodservice provides your grab ‘n’ go foodservice menu with an upscale breakfast sandwich that’s sure to please.

Basil-Balsamic Vinaigrette

  • 2 Tbsp balsamic vinegar
  • 1 tsp fresh basil, chopped
  • 1/4 tsp ground mustard
  • 2 Tbsp extra virgin olive oil
  • salt to taste
  • pepper to taste

Egg, Prosciutto, and Arugula Sandwich foodservice recipe

  • 3 c fresh arugula
  • basil-balsamic vinaigrette
  • 12 multi-grain rolls, halved
  • 24 thin tomato slices
  • 12 Davidson's Safest Choice® pasteurized shell egg(s) cooked sunny-side up
  • 1 medium red onion, thinly sliced
  • 24 slices Prosciutto, thinly sliced

Preparation:

Basil-Balsamic Vinaigrette Preparation

  1. Whisk together balsamic vinegar, basil, and mustard. Slowly drizzle in extra virgin olive oil, whisking constantly, until fully incorporated. Season with salt and pepper to taste.

Egg, Prosciutto, and Arugula Sandwich Preparation

  1. Toss arugula in basil-balsamic vinaigrette. Set aside.
  2. Layer each bottom roll with 1 pickle slice, 2 tomato slices, sunny-side up egg, red onion, 2 slices of Prosciutto, and arugula. Top with other half of roll.

Notes

Substitute low-sodium ham for Prosciutto to make this a Light & Healthy recipe.
