Fried Rice foodservice recipe

Serving Size: 1 cup



  • 6 Davidson's Safest Choice® pasteurized shell egg(s)
  • 1/2 c celery, diced
  • 1/2 c bok choy (cut into thin strips)
  • 1 c carrots (shredded)
  • 6 c white rice (cooked)
  • 2 Tbsp sesame oil
  • 4 Tbsp olive oil
  • 4 Tbsp soy sauce
  • 1/8 tsp white pepper


  • 12 Davidson's Safest Choice® pasteurized shell egg(s)
  • 1 c celery, diced
  • 1 c bok choy (cut into thin strips)
  • 2 c carrots (shredded)
  • 1 gal white rice (cooked)
  • 1/4 c sesame oil
  • 1/2 c olive oil
  • 1/2 c soy sauce
  • 1/4 tsp white pepper


  • 24 Davidson's Safest Choice® pasteurized shell egg(s)
  • 2 c celery, diced
  • 2 c bok choy (cut into thin strips)
  • 4 c carrots (shredded)
  • 2 gal white rice (cooked)
  • 1/2 c sesame oil
  • 1 c olive oil
  • 1 c soy sauce
  • 1/2 tsp white pepper


  • 36 Davidson's Safest Choice® pasteurized shell egg(s)
  • 3 c celery, diced
  • 3 c bok choy (cut into thin strips)
  • 6 c carrots (shredded)
  • 3 gal white rice (cooked)
  • 3/4 c sesame oil
  • 1 1/2 c olive oil
  • 1 1/2 c soy sauce
  • 3/4 tsp white pepper


  1. In a sauté pan heat the olive oil and sesame oil.  Add the celery, bok choy, and carrots and sauté until al dente.
  2. Move vegetables to the side in the pan and add the eggs.  Scramble the eggs.
  3. Add the rice, soy sauce, and pepper to the eggs. Add white pepper to taste.  Toss to combine all ingredients well and heat through.


Garnish with green onions or nuts.
