Ingredients:

  • 12 Davidson's Safest Choice® pasteurized shell egg yolk(s)
  • 3/4 c granulated sugar
  • 5 1/4 c sweetened condensed milk
  • 2 c lime juice
  • 2 Tbsp lime zest
  • 3 9-inch prepared graham cracker crust
  • 3 c whipping cream
  • 1/4 c + 2 Tbsp confectioners' sugar

Ingredients:

  • 24 Davidson's Safest Choice® pasteurized shell egg yolk(s)
  • 1 1/2 c granulated sugar
  • 10 1/2 c sweetened condensed milk
  • 4 c lime juice
  • 1/4 c lime zest
  • 6 9-inch prepared graham cracker crust
  • 6 c pt whipping cream
  • 3/4 c confectioners' sugar

Ingredients:

  • 36 Davidson's Safest Choice® pasteurized shell egg yolk(s)
  • 2 1/4 c granulated sugar
  • 2 qt + 3 3/4 c sweetened condensed milk
  • 6 c lime juice
  • 6 Tbsp lime zest
  • 9 9-inch prepared graham cracker crust
  • 9 c whipping cream
  • 1 c confectioners' sugar

Preparation:

  1. Preheat oven to 350°F.
  2. Place eggs and sugar in the bowl of a 20 quart mixer. Beat with whisk attachment for 4-5 minutes until pale and doubled in size. Add condensed milk and continue beating 3-4 minutes, until thickened. Slowly add lime juice and zest; mix on low speed until blended. Pour into crusts.
  3. Place pies on sheet pan and bake for 15-20 minutes or until filling is set. Cool completely in wire rack, then refrigerate or freeze.
  4. Place cream In the bowl of an electric mixer fitted with a whisk attachment. Whip cream and confectioners' sugar until stiff peaks form. Spread over pie or add dollop to each slice as it is served.
