  • 2 c frozen corn, thawed
  • 4 c frozen spinach, kale, or Swiss chard
  • 12 Davidson's Safest Choice® pasteurized shell egg(s)
  • 3 c low-sodium refried beans
  • 24 small flour or corn tortillas

Ingredients:

  • 6 c good quality store-bought salsa
  • 3/4 lb frozen corn, thawed
  • 1 1/2 lb frozen spinach, kale, or Swiss chard
  • 24 Davidson's Safest Choice® pasteurized shell egg(s)
  • 6 c low-sodium refried beans
  • 48 small flour or corn tortillas

Ingredients:

  • 3 qt good quality store-bought salsa
  • 1 1/2 lb frozen corn, thawed
  • 3 lb frozen spinach, kale, or Swiss chard
  • 48 Davidson's Safest Choice® pasteurized shell egg(s)
  • 3 qt low-sodium refried beans
  • 96 small flour or corn tortillas

Ingredients:

  • 1 gal + 2 c good quality store-bought salsa
  • 2 1/4 lb frozen corn, thawed
  • 4 1/2 lb frozen spinach, kale, or Swiss chard
  • 72 Davidson's Safest Choice® pasteurized shell egg(s)
  • 1 gal + 2 c low-sodium refried beans
  • 144 small flour or corn tortillas

Preparation:

  1. Preheat oven to 375°F. Combine salsa, corn, and greens in a baking pan and create a slight depression with the back of a spoon for each serving. Crack one egg on top of salsa into each depression. Bake until whites are just set and yolks are still runny, about 20 minutes.
  2. Meanwhile, heat up beans and warm tortillas. Serve light and healthy baked huevos rancheros on 2 tortillas smeared with 1/4 cup beans and topped with desired garnishes. Serve immediately.
