Mediterranean Vegetable Tart foodservice recipe

Ingredients:

  • 3 c eggplant
  • 3 c zucchini
  • 1/4 c olive oil
  • 1 c onions, thinly sliced
  • 2 Tbsp garlic cloves, minced
  • 1 c bell pepper, chopped
  • 2/3 c mushrooms, sliced
  • 1 c cherry tomatoes, halved
  • 1 Tbsp + 1 tsp fresh thyme leaves
  • freshly ground black pepper to taste
  • 1/4 c Kalamata olives, pitted and sliced
  • 1 c softened goat cheese
  • 1/4 c sour cream
  • 4 Davidson's Safest Choice® pasteurized shell egg(s)
  • 1/4 tsp salt
  • 2 10-inch prepared pie crusts

Ingredients:

  • 1 1/2 lb eggplant
  • 1 1/2 lb zucchini
  • 1/2 c olive oil
  • 2 c onions, thinly sliced
  • 1/4 c garlic cloves, minced
  • 2 c bell pepper, chopped
  • 1 1/3 c mushrooms, sliced
  • 2 c cherry tomatoes, halved
  • 2 Tbsp + 2 tsp fresh thyme leaves
  • freshly ground black pepper to taste
  • 1/2 c Kalamata olives, pitted and sliced
  • 1 lb softened goat cheese
  • 1/2 c sour cream
  • 8 Davidson's Safest Choice® pasteurized shell egg(s)
  • 1/2 tsp salt
  • 4 10-inch prepared pie crusts

Ingredients:

  • 2 1/2 lb eggplant
  • 2 1/2 lb zucchini
  • 3/4 c olive oil
  • 3 c onions, thinly sliced
  • 1/3 c garlic cloves, minced
  • 3 c bell pepper, chopped
  • 2 c mushrooms, sliced
  • 3 c cherry tomatoes, halved
  • 1/4 c fresh thyme leaves
  • freshly ground black pepper to taste
  • 3/4 c Kalamata olives, pitted and sliced
  • 1 1/2 lb softened goat cheese
  • 3/4 c sour cream
  • 12 Davidson's Safest Choice® pasteurized shell egg(s)
  • 3/4 tsp salt
  • 6 10-inch prepared pie crusts

Preparation:

  1. Heat oven to 400°F. Cut eggplant and zucchini lengthwise in half, then crosswise into 1/4-inch slices. Place eggplant in colander; sprinkle with salt and let stand 10 minutes. Set zucchini aside.
  2. In a large non-stick sauté pan, heat half the olive oil over medium heat until hot. Rinse eggplant and drain well. Add to to sauté pan. Cook until vegetables start to soften. Add onion and garlic; continue cooking for 2-3 minutes, stirring frequently. Add remaining olive oil a small amount at a time if the mixture seems to be sticking. Add zucchini, bell peppers, and mushrooms. Cook for 4-5 minutes stirring frequently. Stir in tomatoes. Remove from heat. Mix in olives and thyme. Season with ground pepper.
  3. In the bowl of a electric mixer, beat goat cheese and sour cream until smooth. Add eggs and salt; beat until combined.
  4. Place pastry in a 10-inch tart pan with a removable bottom. Trim crust to 1 inch overhang. Fold overhang to form double thick sides.
  5. Spread goat cheese mixture over pastry. Spoon vegetables over cheese mixture. Bake on rack set in lower third of oven 20 minutes, or until filling is set and crust is golden. Let cool about 10 minutes before serving.

Notes

Use favorite homemade crust rolled to 12-inch diameter, or use prepared refrigerated 10-inch diameter rolled crust. If using prepared crust, lightly roll with rolling pin to 12-inch diameter before placing in tart pan.
