  • 6 Tbsp unsalted butter
  • 2 Tbsp chopped fresh dill
  • 2 tsp fresh lemon juice
  • 12 slices whole grain bread, lightly toasted
  • 3 Tbsp unsalted butter (for cooking egg)
  • 16 Davidson's Safest Choice® pasteurized shell egg(s)
  • 1 tsp freshly ground black peppercorns
  • salt, optional to taste
  • 1 1/2 c crumbled feta cheese
  • minced fresh dill to taste

  • 2 c chopped smoked salmon
  • 3/4 c unsalted butter
  • 4 Tbsp chopped fresh dill
  • 4 tsp fresh lemon juice
  • 24 slices whole grain bread, lightly toasted
  • 6 Tbsp unsalted butter (for cooking egg)
  • 32 Davidson's Safest Choice® pasteurized shell egg(s)
  • 2 tsp freshly ground black peppercorns
  • salt, optional to taste
  • 3 c crumbled feta cheese
  • minced fresh dill to taste

  • 4 c chopped smoked salmon
  • 1 1/2 c unsalted butter
  • 1/2 c chopped fresh dill
  • 3 Tbsp fresh lemon juice
  • 48 slices whole grain bread, lightly toasted
  • 3/4 c unsalted butter (for cooking egg)
  • 64 Davidson's Safest Choice® pasteurized shell egg(s)
  • 4 tsp freshly ground black peppercorns
  • salt, optional to taste
  • 6 c crumbled feta cheese
  • minced fresh dill to taste

Ingredients:

  • 6 c chopped smoked salmon
  • 2 1/4 c unsalted butter
  • 3/4 c chopped fresh dill
  • 4 Tbsp fresh lemon juice
  • 72 slices whole grain bread, lightly toasted
  • 1 1/8 c unsalted butter (for cooking egg)
  • 96 Davidson's Safest Choice® pasteurized shell egg(s)
  • 2 Tbsp freshly ground black peppercorns
  • salt, optional to taste
  • 2 1/4 qt crumbled feta cheese
  • minced fresh dill to taste

Preparation:

  1. In food processor, combine salmon, butter, dill and the lemon juice; process until smooth. Spread salmon butter over one side of each toasted bread slice, dividing equally. Arrange bread, butter side up, on baking sheet; place in warm (200° F) oven, leaving door ajar.
  2. In medium bowl, beat eggs, peppercorns and salt, if desired. In large nonstick skillet melt butter over medium heat. Pour egg mixture into skillet. Just as eggs begin to set on bottom and sides, use spatula to gently fold cooked and uncooked portions together. Continue until eggs are combined but still runny. Add feta; stir gently to incorporate, then remove from heat.
  3. Spoon equal portions of egg mixture over salmon butter and sprinkle each with 1/4 teaspoon minced fresh dill. Serve immediately.
