Prosciutto Provolone Supremo foodservice recipe

  • 12 Davidson's Safest Choice® pasteurized shell egg(s)
  • 12 oz Prosciutto, portioned as half-ounce slices
  • 9 oz sliced provolone cheese, portioned as 3/4 ounce slices
  • 2 Tbsp olive oil
  • 2 oz curly red and green leaf lettuces
  • 1/2 oz fresh basil leaves
  • 3 oz sun-dried tomato pieces (optional)

Ingredients:

Balsamic Mayonnaise

  • 3/4 c reduced fat mayonnaise
  • 1 Tbsp balsamic vinegar

  • 24 oz Prosciutto, portioned as half-ounce slices
  • 18 oz sliced provolone cheese, portioned as 3/4 ounce slices
  • 4 Tbsp olive oil
  • 4 oz curly red and green leaf lettuces
  • 1 oz fresh basil leaves
  • 6 oz sun-dried tomato pieces (optional)

  • 2 Tbsp balsamic vinegar

  • 1/4 c balsamic vinegar

Ingredients:

  • 144 Ciabatta bread slices (approx. 1 ounce each)
  • 72 Davidson's Safest Choice® pasteurized shell egg(s)
  • 4 1/2 lb Prosciutto, portioned as half-ounce slices
  • 3 lb 6 oz sliced provolone cheese, portioned as 3/4 ounce slices
  • 8 Tbsp olive oil
  • 12 oz curly red and green leaf lettuces
  • 3 oz fresh basil leaves
  • 18 oz sun-dried tomato pieces (optional)

Ingredients:

Balsamic Mayonnaise

  • 4 1/2 c reduced fat mayonnaise
  • 6 Tbsp balsamic vinegar

Preparation:

  1. Spread each slice of bread with balsamic mayonnaise.
  2. Heat olive oil in skillet on medium heat. Heat prosciutto slices, about 1 minute each, and place on bread. Top one half of each sandwich with Provolone cheese slice.
  3. Crack eggs onto skillet. Cook on medium heat until whites cook; then turn gently to make fried egg over-easy. When completed, lay egg on top of cheese slice.
  4. Finish sandwich by topping with lettuce and basil leaves, plus sun-dried tomatoes, and second slice of bread.
  5. Serve immediately or from a low-humidity warmer or heated surface.
