Soft Boiled Egg & Avocado Toast Recipe

This soft boiled egg & avocado toast recipe is perfect for cook to order and grab 'n' go foodservice.

Serving Size: 1 piece of toast with avocado and 1 soft-boiled egg

Yield: 2 servings

Ingredients:

  • 1/2 large avocado, roughly chopped
  • 2 thick slices sourdough bread, toasted
  • 2 Davidson's Safest Choice┬« pasteurized shell egg(s), soft-boiled
  • salt to taste
  • pepper to taste
  • extra virgin olive oil
  • cilantro (garnish)

Preparation:

  1. Lightly mash avocado. Divide avocado between slices of toast.
  2. Top each slice with (halved) soft boiled egg. Season with salt and pepper to taste.
  3. Sprinkle each slice with red pepper flakes.
  4. Drizzle olive oil over each slice and garnish with cilantro.
