  • 24 mini French or artisan rolls, sliced for sandwiches
  • 1 1/2 lb steak, flank, round, tri-tip, or other suitable cut
  • 3 cloves of fresh garlic
  • 8 oz fresh bleu cheese crumbles
  • 2 large, red onion (thinly sliced)
  • 24 Davidson's Safest Choice® pasteurized shell egg(s)
  • 4 Tbsp butter or margarine

Ingredients:

Horseradish Sauce

  • 1 Tbsp mayonnaise
  • 3 Tbsp Dijon mustard
  • 6 Tbsp horseradish cream, prepared
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp parsley (finely chopped)

  • 18 cloves of fresh garlic
  • 48 oz fresh bleu cheese crumbles
  • 12 large, red onion (thinly sliced)
  • 144 Davidson's Safest Choice® pasteurized shell egg(s)
  • 1 1/2 c butter or margarine

Ingredients:

Horseradish Sauce

  • 6 Tbsp mayonnaise
  • 1 1/4 c Dijon mustard
  • 2 1/4 c horseradish cream, prepared
  • 3/4 c fresh lemon juice
  • 3/4 c parsley (finely chopped)

Preparation:

  1. Pre-heat griddle or grill.
  2. Prepare caramelized onions and set aside.
  3. Prepare horseradish sauce and refrigerate until ready for use.
  4. Rub steak with garlic. Cook steak to medium doneness (at least 140 to 145°F).
  5. Using butter, margarine or non-stick cooking spray, prepare cooking surface for frying. Using low heat, fry the eggs, sunny side up, in skillet or on griddle, using a lid to cover the eggs during cooking to capture naturally occurring steam. Eggs should be cooked such that the yolk can still run slightly but the egg is not hard or rubbery.
  6. Spread a layer of horseradish sauce on the inside of the roll top, approximately 1 1/2 tablespoon for each sandwich.
  7. Assemble each sandwich on artisan or French roll in the following order: steak (1 ounce), egg (1), caramelized onions (1/4 ounce), and crumbled bleu cheese (1/2 to 2/3 ounce). Close sandwich or serve open faced.
