Strawberry-Pistachio Semifreddo

Strawberry-Pistachio Semifreddo foodservice recipe

Serving Size: 1 3/4-inch slice



  • 2 2/3 c strawberries
  • 1 1/3 c sugar, divided
  • 3 c heavy whipping cream
  • 7 Davidson's Safest Choice® pasteurized shell egg yolk(s)
  • 2 tsp vanilla extract
  • 1/3 c pistachios, toasted and chopped


  • 5 1/3 c strawberries
  • 2 2/3 c sugar, divided
  • 6 c heavy whipping cream
  • 14 Davidson's Safest Choice® pasteurized shell egg yolk(s)
  • 4 tsp vanilla extract
  • 2/3 c pistachios, toasted and chopped


  • 8 c strawberries
  • 4 c sugar, divided
  • 9 c heavy whipping cream
  • 21 Davidson's Safest Choice® pasteurized shell egg yolk(s)
  • 2 Tbsp vanilla extract
  • 3 c pistachios, toasted and chopped


  1. Line 1 9x5-inch loaf pan (for every 12 servings) with plastic wrap leaving a 2-inch overhang on all sides.
  2. Place strawberries in a food processor or blender. Add 1/3 of sugar; process until berries are puréed; set aside.
  3. In a standing mixer, beat cream and 1/3 of the sugar until stiff peaks form; set aside.
  4. In a separate bowl, beat egg yolks with remaining sugar until pale yellow and tripled in volume. Add vanilla. Fold whipped cream into yolks, stir in pistachios.
  5. Pour half of egg mixture into the loaf pans. Top with half of strawberry puree. Use a small spatula to swirl puree into egg mixture. Repeat with remaining egg mixture and strawberry purée. Smooth top. Fold plastic wrap over to cover top. Freeze until firm, about 12 hours, up to 3 days.
  6. To serve, remove plastic wrap and invert semifreddo onto a clean cutting board. Cut into 3/4-inch thick slices.
